What to do with leftovers?

I made some chicken and dumplings for dinner last night. It was tasty and delicious. However, there is a lot leftover.

Since it is cream based I don’t think it will handle freezing well and I really don’t like eating leftovers as they are. I like to make them into something else for some variety.

I normally don’t have problems with kitchen creativity but I am stumped as to what I can make chicken and dumplings into.

Any suggestions?

Thin it out with some chicken broth and make soup!

add a bunch of veggies–frozen mixed veggies (or I supposed canned ones, if you must) stuff like peas and corn and lima beans and call it “Chicken Pot Pie in a Broken Pot”

Scoop out the dumplings, add cheese, salsa and tortillas and make a Mexican Chicken casserole.

Scoop out the dumplings, add spice and serve it over rice or noodles.

Thanks for the suggestions. I like the idea of transforming it into some sort of Mexican dish.

I like to keep pastry sheets in the freezer, puff or shortcrust, so a dollop of leftovers can easily be wrapped up and baked into a pasty-like or pie-like food object. My sister called them “happies.”

Hop on a plane right this second and bring them to me!!!

If not, what those other people said. Plus recipe request? Please?

I might make it into chicken pot pie… haven’t decided yet.

BlueKangaroo, I used Paula Deen’s recipe which I found here. It was the first time I had made it and my dumplings didn’t come out too puffy but they were still yummy.
