I have about three nice red peppers, one good yellow, five or six jalapenos, and about six small tomatoes from my garden. Yes, my yield was very low this year. Actually, I have had quite a good lot of jalapenos which I used to make pickled peppers, but I’m trying to figure out what to do with this last bunch of stuff.
I realize this is slim pickin’s, but I could always add to it with other stuff. Any ideas?
just chop it up using however many peppers you like combined with some red onions, some lime juice and maybe add some cilantro.

edit: this might taste great with some cooked corn cobs: chop the corn into about 1 to 2 inch slices and cook. reduce the tomatoes with chillies and butter. when everything’s cooked, mix the butter/tomato and corn slices. add cilantro.
Dice it all, toss into a crock pot with half a pound browned ground beef, half a pound of diced chicken, a diced onion, a pound of pinto beans, a can of black beans, a can of red kidney beans, and a can of black eyed peas. Add 3 packs of chili mix, or use your own mix. Salt lightly, and let cook for 8 hours on high.
You’ll have enough chili to feed 6 people for 3 nights.
Got around to making this tonight and it is fab! It’s pretty damn spicy, but a little sour cream evens it out. I also made some homemade cornbread, which complimented it nicely.
