What'll I serve with Greek roast lamb tonight?

I’m buying a whole shoulder of lamb this morning. I’m going to rub it with garlic, lemon and oregano, tent it with foil, and roast it very slowly until it’s falling off the bone, like pulled pork.

Tzaziki, of course, will be on the menu. But I don’t care much for the typical Greek salad of cucumbers, tomatoes and onions. What’s a good Greek side dish to go with this rich lamb dinner?

Spinach rice would be my first choice. Some simple roasted potatoes, sauteed dandelion greens (or collards) with lemon, garlic, and oregano, or green beans prepared the same way with a bit of tomato tossed in with would also be a nice side.

Spinach rice, eh? Well, there’s a boatload of spinach out in the raised beds waiting to be picked. I think I’ve found my side dish. I know dill is a popular Greek herb; I wonder if I can season the spinach with dill?

The shoulder has been in the oven at 320 for about three hours now. It’s filling the house with the smell of garlic and oregano and it’s getting very tender and melty-looking. I’ll uncover it for about 20 minutes and raise the heat to crisp the outside just before serving.
