Tonight: leftover chicken curry (start with tomato sauce, peas, chicken broth, and curry powder; cook on high for 10 minutes, then add a couple of cooked, cubed chicken breasts, and simmer for an hour) over rice
Hmmm, I have some leftover chili and I have polenta. I bet that would be really good. Half the time I make cornbread with my chili anyway.
The theme for this week’s meals: Must use eggs! So tonight’s leftover smorgasbord includes frittata, Salisbury steak, and Italian vegetable custard. I’m pretty sure husband’s going to want to go out for pizza.
Breaded-herb chicken, rice, a tossed salad with blue cheese dressing, a glass of ice water, and some Nawlins pralines for dessert.
Last night we had baked acorn squash. I get them from Trader Joe’s where they’re big and cheap.
Still working on a pot of chili I made a couple of days ago. I think we’ll take a break tonight and have Italian sausage sandwiches with some sweet peppers and onions.
