Sometimes I do things, and it is so stupid that my husband says, “Nzinga, don’t tell anyone about that. Take that to your grave”.
So, I’m posting it to the dope.
I decided to make some mackerel patties a few weeks ago and they were DYNOMITE!!! So I thought if those were great, some tuna patties will be awesome!
I decided to make them the exact same way that I made the mackerel patties…just replacing the mackerel for the tuna…a can of tuna, two eggs, some onion, bell pepper, seasonings, and fry it up in some oil.
Well, turns out the tuna was canned in water, not oil. So after it fried in the oil for about a minute, THEY JUST STARTED EXPLODING! I mean oil was shooting straight up into the air, at more than two feet up. I was astonished. I didn’t know how to get things under control. I put a jacket over my head and ducked in to take the skillet off the heat. It calmed down enough that I could see the patties were already cooked through. I took a bite. Absolutely tasteless. Apparently you can’t cook tuna patties with the same recipe as mackerel patties. Who knew.
I used the rest of the tuna pattie mixture by frying it up in a bit of butter. Just awful and tasteless. Ended up eating fried eggs for dinner.
Cold cuts, Kaiser Rolls, Cold Salada…it’s too damned hot to cook tonight.
I put some sausages out to thaw this morning, so I’ll grill those tonight for dinner, with some steamed rice and a salad.

Bumping this up because I tried the chicken pot pierecipe that **Snickers **recommended, and it is indeed very, very good. Made three mini-pies instead of one big one, so they’re more portable. Used Pillsbury’s pie crusts, and honestly, I’ll never make another crust from scratch again. Those things are awesome! Added sage and thyme, and browned the chicken lightly first, but otherwise followed the recipe as written.
I started it a little late, so while the pies baked, we ate some of the filling over egg noodles, like some ersatz deconstructed casserole. So we already knew the pies would be good. Then the pies went into the fridge, and I already had one today for lunch. Delicious!
Jamaican Hot Pepper Shrimp. The broth is like liquid fire, salty garlicky liquid fire. The shrimp won’t be nearly so spicy, since they just soak in the broth for awhile, but they still come out mighty tasty. Sliced avocado on the side, buttered baguette to soak up the juices, and that’s a meal!
Tonight, we’re going to a Mexican restaurant near our house. Kids eat 2 for 1 or free or something M-Th and my wife doesn’t feel like cooking.
She made great chicken enchiladas last night, though.
I had big fat steaks for the last two nights in a row. Today, I’m thinking of making a tofu based sandwich since I forgot to thaw out chicken.
Friends are in town from upcountry. Will be out in the bars tonight (Friday night) with the husband, and tomorrow night we’re all getting together for a Mexican-food extravaganza. Mmmmmm.
Oh man, that looks tasty. I got a bunch of Scotch bonnets in the yard I need to use up, and that looks like just the ticket (I already made jerk with them, but I could use a change of pace.)

Recovering from the extravagance of breakfast-for-dinner last night (eggs, sausage, scallions, mushrooms and cheese fritatta).
Binner?! I have to try that some time.
I made a really spicy canh chua tom. Both my parents are sick and pho or canh chua were my go-to sickness soups when I was living in L.A., so I volunteered.
Turned out great.

I very highly recommend it. I’m way hungrier in the evening than first thing in the morning, so dinnertime is when bacon, eggs, etc. sound really extra-good.

Last night was Thai food - uber-spicy fried rice with pork, red curry and chicken satay. We finally found a place that doesn’t “white-spice” us.
Tonight is a baseball game, so lots of healthy fare awaits - hot dogs, nacho, pretzels, beer, ice cream, the works!
