What's for dinner tonight?

We had a bit of a southern down-home menu.

Corned beef and cabbage, and cornbread. The corned beef came from a can. Two cans, actually!

I finally listened to my “inner mom’s voice”, and made my cornbread in my cast iron skillet. OMG! I had forgotten how the crispy bottom is soooo tasty!

It was THE YUM.

Something simple, because I have to rush out to a choir practice afterwards. So it’s going to be gnocchi and pesto, salad, and some bread.

The cheese souffle was awesome, by the way.

Mezze penne with house made marinara and sausage from a little Italian grocery down the street.

Tonight is chili verde, using home-grown chilis. Yum!

Tonight, chicken enchiladas, tomorrow pot roast.

The rest of the week will see pasta primavera, pork chops, and leftovers, not necessarily in that order.

I can’t remember what’s on my list. I think it will be pork chops.

(sigh)

I procrastinate.

So the hens will be for tomorrow night. Tonight we’re having that steak, with the tomatoes and maybe some fresh mozzarella. Basil in the backyard is coming in nicely - that will go nice with the 'maters.

Had some salmon in a quick Asian-y marinade last night, since Mr. Horseshoe was finishing his huge lunchtime sammich as dinner, and he doesn’t like salmon, so I fix it for myself when he’s having something I don’t want. Snacked on the leftover bits at my desk today.

Holy crap this chili verde is good! The wife marinated the pork in Versailles’ Mojo marinade, then popped it in the slow cooker with the chilis. A little honey to mellow out the bite, a buttload of garlic, and we are eating fine tonight!

We had fried catfish, corn on the cob, and cole slaw. Nom nom!
