What's for dinner tonight?

Ummmmmm Can I assume Little Debbie is the name of an eating establishment or are you bragging?

Well, inspired by the British food thread, my meal tonight was Lancashire hotpot (minus the lamb kidneys, which were not available, and I’m actually not all that much a kidney fan.)

No, but I hit bottom.

It’s a brand. That makes snack cakes. Such as chocolate or honey.

I made toasted cheese sandwiches for my dinner last night. I don’t know what dinner tonight will be, but I’m leaning toward something easy, again, like pizza, or wraps.

We’re grazing. At the last minute I pulled back from pasta with pesto and instead did a red bell and anaheim pepper, onion, bacon, cheese and egg scramble. Veggies and protein, yes! The mister had edamame and is now having popcorn.

We are currently looking at brisket recipes. Never done one before, but the weather is supposed to be kind of icky this weekend, so… Any recipes?

The pozole was excellent, by the way. It definitely benefitted from a day in the fridge. So rich with collagen (and starch from the corn, probably) that it looked like jello when I took it out of the fridge. Always a very good sign.

I went to the guy who grinds the fresh masa and had him give me 2 pounds of pre-ground corn/hominy for this batch. It was excellent, but I found a bag of beautiful large, red dried corn on the way out that I’ll use next time. It will take longer to cook, but I’m eager to see how it will look and taste.

I made this last night, kind of thinking that we’d be eating it half the week, but it turned out that everyone loved it. They wiped it out in no time and I was washing the casserole dish before I knew it…this has never happened before. So thanks Alice!
