What's mayo "supposed" to smell like?

Opened up a jar I had in the fridge door this afternoon, smelled it, and recoiled. I thought at first it smelled like sulfur or something, but subsequent sniffs (both immediately after and later, after my nose cleared) didn’t support that reaction. “Very strongly like eggs,” yes, but that’s a big duh, and the label says it’s fine until November - as far as I could tell, I never smelled that sulfur-like smell again after multiple attempts. So I ended up eating a sandwich with it, and wondering what I was “supposed” to smell, and if it were bad, if I could have “gotten used to” the altered smell so quickly.

Now that I think about it, this seems a little silly, but it just never occurred to me to smell mayo before. :slight_smile: Anyone know?

Real mayonnaise has eggs in it. So, yes, it can have an eggy smell. You probably just got a face full of it when you weren’t expecting it. If it’s been stored properly, wasn’t growing anything, and tasted OK, it’s fine.

P.S. It’s true that botulism has no smell/taste, but I refer you back to “if it’s been stored properly.”
