A couple of days ago, I got a cool new spice rack with 40 different spices. One of the spices is “tandoori spice”. I love tandoori, but I have no idea how to make it. I have a feeling it will be too strong if I just sprinkle it over whatever I’m cooking- what can I mix it with to marinate my chicken (or whatever) in? All you good cookin’ dopers, help!
Most tandoori recipes I’ve seen use yogurt, spices, fresh garlic or onion and maybe some fresh coriander. The spice probably is okay to just sprinkle on, though, unless it is adulterated with a lot of powder garlic or something.
Penzeys gives a short recipe for tandoori chicken which sounds pretty good.
I can personally state that this company is an excellent resource for fresh spices and ideas on how to use them.
(Like I carry any great weight anywhere.)
Highly recommended is a recipe something like the one dwyr posted, but cook the chicken on a BBQ…mmmmmmmmmmmmmmmmmmmm…
