When I post, and then notice an egregious error, does everyone else see this too? Or am I shelterred until my edit window clears?

Nope, once you hit that “Submit Reply” (or “Post Quick Reply” if you’re in the quick reply box), that submission goes through, hits the database and is immediately viewable by everyone. (Assuming, of course, the database is immediately responsive; sometimes, it’s not, of course.)
Your posts are still viewable throughout your window of edit.
