I’m looking for a crepe pan with no lip - that is, basically a perfectly flat and round pan with a handle; however, all I can find anywhere is like these ones:
they all have a lip on the side. I’ve heard tales of ‘lipless’ crepe pans, although they were all from French (from France) people - is this something I can’t buy in Canada/North America?
Here is one from Amazon.com, but it’s out of stock. It looks weirdly like an oversized ping pong paddle. I’ve also found a dedicated electric crepe maker that has no lip. also at Amazon. Actually, on re-reading, the description for that crepe pan says “The Staub crepe pan has a shallow rim to make perfectly round crepes every time” but I don’t know if they mean a lip, as I can’t see one.
The flip part is easy, put something under the crepe, lift the crepe onto a stick, and lay it back down. The hard part is spreading out the batter without it dripping all over, that is what the upturned lip is for.
With a lip, you pour the batter and tilt the pan this way and that until it spreads out into a circular shape. Without a lip, you have a rim, and have to spread the batter with a paddle, the rim prevents spills, gives you a perfectly round crepe, and sets the thickness.
Fair enough, I was just curious. I kind of want one now too, but mostly because your trouble with finding it has triggered my “neat, there is something that is hard to find” collector reflex.
Maybe these couple of bumps will bring the thread to the attention of someone who knows.
The ping-pong looking one is made by a French company called Staub. I found their US website but it’s not listed there although it is listed at the company’s French website. So it does seem to be something that’s more popular in Europe. Perhaps you could contact the company and ask them if they’ll sell it to you? (I did find a couple of flat ones at Amazon.co.uk, but the listing says they’ll only ship it within the UK.)
