Wherein I highly recommend water buffalo roast

My wife prepared a water buffalo roast for supper last night. Not bison, but true water buffalo. She found a local farmer who raises and butchers them (at a farmers market, appropriately enough). She simply put it in the crock pot with a little garlic seasoning and, 8 hours or so later, it was fantastic!

It’s not a cheap meat, she paid $9.00/lb for a 2 lb. roast, but it will make several meals for our family. Nutritionally, it’s very good - comparable to boneless, skinless chicken breast but with fewer calories.

What’d it taste like- beef? Venison?

The taste was more like beef than venison, not gamey at all. If you have had (and liked) bison, you’ll like water buffalo.
