Hmmmm. Having looked at all the linked photos, I’d have to still go with one of the two Hugh’s: Laurie or Jackman.

Eddie in my head though… as weird and odd as it is… I picture This Guy: Adam Richman
He’s totally Eddie before he meets Roland in my mind.
Eddie’s not a fighting sorta guy, but just an everyday sorta New Yorker, which is why I think Richman would be GREAT for the role.
ToeJam, I think you’re forgetting that there’s an extended action sequence featuring Eddie buck naked. 
I think Garret Dillahunt would be great as the man in black! And Joshua Jackson would also be a good Eddie.
I have to admit, I’ve only seen him in one thing, “Tin Man,” he was very intense in that. His eyes are definitely piercing, not to mention unusual. What else has he been in? I’d like to see him smiling and laughing, he’s such a good looking man.
He’s been in a lot of stuff, looking at his imdb page, but I’ve only seen him in the occasional role. He just seems to have a very genial demeanour to me.
