I’ll tell you what got deleted - a sense of decency in modern cinema, that got deleted!
Will doesn’t find or catch bad guys, he profiles them and figures out who they are.
The Good Guys already know who Hannibal is.
Hannibal picked hand cuffs in SOTL with a paper clip hidden on his person. I don’t see why he didn’t do that in Hannibal.

Or at least try chopping through it’s weakest point with a cleaver. Or cut off Starling’s hair and drag her with him (he’s got some chloroform and with her free from the freezer door he can get to that and the key).
I imagine the reason is that Harris didn’t write this alternate ending.
So what happens if you feed Hannibal after midnight, then fly him to another time zone where it’s before midnight?
Long as you don’t get him wet, you’re good.
In the book, I got the impression that Hannibal saw Clarice as a substitute for his sister. Well, sort of. There was the lover thing too.
Well, Lithuania is the Alabama of Europe.
I liked Hannibal for what it was, and I thought that Moore nailed her role in it. After a few minutes I dismissed wanting to see Foster.
Why would Foster want to do a sequel? She isn’t a sequel kind of actress. There wasn’t any new character development for her except the embarrassing ending of the book, and the movie removed even that.
