I think G’day is pretty much the shorthand label word for Australian speech (Strine/stryne/strayan is, as I understand it, the slang name for said speech).
The main difference with the “s” as done in the SNL skit for “Da Bears” is that it is unvoiced. Normally “Bears” is pronounced with a “z” sound at the end. In the skit, it’s pronounced with an “s”. That said, spelling it with extra esses may be a reasonable way to get this across.

I went to a large university in south-central Indiana, and at one time worked at a fast food restaurant in town. There was a very localized accent near there that pronounced “burgers” as “boogies.” I had a hard time keeping a straight face the first time I took an order for a “hamboogie” or a “cheeseboogie.” I also heard more statements like, “Your car needs fixing,” or “My clothes need cleaning.”

That usage (I consider it an Ohio Valleyism) needs put out of our misery and buried permanently, alive or dead.
