I own a PS2, but play games a lot on a friend’s X-Box. I really don’t know anything about that particular genre of game but will say that in my opinion the X-Box is a far superior machine. The graphics are better and the loading times are much quicker.
I’ve even compared Tiger Woods Golf 2003 side by side, and the difference was very noticeable.

I’m a big fan of Mortal Kombat:Deadly Alliance on PS2. Spider Man:The Movie is also pretty good in the comic genre. I’ve heard good things about Wolverine’s Revenge as well. Batman is shit, as well as Superman.
You allways get more choice with a PS2, but when the game is done well the XBox version is better than the PS2 version (with a few exceptions). I have a PS2, and would have recomended it 100% over the XBox because of the platinum release $20 games selection, but now XBox has it’s own platinum release software it is a much more even descision. If the price of games doesn’t matter to you, then you must be ritch enough to buy both systems. Currently second hand game market seems to be better for PS2, but you have to be more careful checking reviews etc. to avoid buying crud.

MK:DA is very good on the PS2. The fatality moves are excellent. I have also play Dead or Alive on a friends X-box, and that too is very good. I have also played Tekken 4, which is good but in my opinion not enough of an improvment over Tekken 3.
I think you could buy either system and still get good quality fighting games. It comes down to the X-box being a faster system, but it has a fairly small selection of games available. Whereas the PS2 is not as powerful, but has a much wider selection of games available.
As an update, someone mentioned Soul Caliber. A good friend of mine imported Soul Caliber 2 for the GameCube, and it absolutely rocks. Best fighting game ever. The GameCube version has a playable Link (from the Zelda games) (don’t get your hopes up, he has basically the same moves as those from SSBM). The Xbox version will reportedly include Spawn and I haven’t heard about the PS2 version. But rest assured, this game does indeed rock. Get it when it comes to the states in November.
