Not in Spain, I mean in the U.S. where you stay at one location. My wife and I will usually order three at a time, starting with the more appetizer-like tapas, such as croquettes. After we’ve finished we’ll then order a few more. These are usually the meats and vegetables. Most often we’ll order once more, again another meat and vegetables.

My usual method is to order everything I think I might want to eat in one go. It usually arrives staggered anyway, cold stuff right away then warm stuff after.
This is also how I deal with mezze and antipasti, but not dim sum.
Also not in the US (I’m UK) but we do similar to the above - ordering 5-6 items between two, and that’s pretty much always enough, so we don’t need to order any more.
My appetite tends to be fickle so I am careful not to over order. I identify 5-6 items on the menu that I want, initially order the two or three I really want, and if I’m still hungry, order the others one at a time after that.
