10 year old cabot cheddar

Bu can you find Baldersons in American supermarkets? It is easy to find in Canada and their oldest types are often on sale at Costco. I had a buddy from Carleton Place (Ontario) who bragged about it, when it was widely unknown but had just won its first global award.

I was able to find it online at Wegmans USA, but i don’t think they have it near me.

Probably not. But I think that @puzzlegal was referring to what she might find on a trip to Toronto.

A quick search on Reddit shows that folks have been noticing this.

My guess is they are expanding to reach new regions and have adjusted aging times in order to move product through more quickly, or just to keep costs down (I’m not really sure about the business analytics on how much it costs to age cheese longer).

Until relatively recently, there was a store here that would sell irregular ends of Cabot cheddar for really low prices. In my 20s we would throw parties and make snack/charcuterie trays on the cheap by using these ~1lb blocks with funny edges that we bought heavily discounted. And afterwards, I’d end up with a few pounds of cheese left over and just eat that for the next week. Ah, the joys of youthful gluttony and local dairy products!

What’s the Big Deal?? My refrigerator is chock-full of 10 year old stuff! Some of it very well may be cheese. :laughing:
