A coupla lunch questions for y’all...

  1. I almost always have plenty of leftovers to whatever I cook, but I usually save them for dinner, figuring I’m more likely to be impatient for dinner when I get home, and that I’ll save more money, dinner being more expensive than lunch. But with my job, I’m not sure the latter is the case anymore, and the former may not be enough to tilt the balance away from using my leftovers for lunch instead. OTOH, eating the same thing for lunch and dinner can get tedious. What do you all think?

  2. Since I work in a pretty high rent location, lunch tends to be expensive, one reason for my musings above. What are some good non sandwich lunches that are filling that I could take to work? One big obstacle is that I’m a very picky eater, but there’s no denying that a few more home lunches a week could save me a lot.

Get yourself some microwaveable leftover containers, and lunch can be anything at all. When I’m not doing sandwiches, I usually go with casseroles or stews, because both are easy to make a bunch of servings of at once and pack the extras away in the containers, for a week or so of eating.

Any veg. soup or chili is always good. You could always add pasta at night to make it differ somewhat. As in chili-mac or veggie-mac.

Alternate. Eat Monday’s leftovers on Wednesday. Cook something new on Tuesday. Eat Tuesday’s leftovers on Thursday.

Taco salad is good wrapped in tortillas the next day.
