I’m in the plain meat camp, I have prepped them many different ways but imo the tastiest burgers are 80/20 fresh ground hand formed fried in a hot sauté pan with a splatter guard which still does not contain all the grease splats. It browns it sizzles without braising add cheese slice then put on a toasted sesame or onion bun. A ripe tomato and/or little condiment of your choice it’s juicy and flavorful.

We usually season our burgers with onion and garlic powder, salt and pepper. But my wife got the idea of making “meatloaf burgers” one time, and we do that a lot now. I’m sure some would turn up their nose at the not a “real” burger, but I don’t care, it’s delicious.
Moms meatloaf:
Ground meat
onion powder
bread sprinkled with water but not completely soaked (this makes almost a paste that helps hold it together)
Beef soup mix
raw egg
Knead by hand, but not too much mixing, and shape into pattiies, pan fry until no longer pink. Comes out very tender and tasty.
1lb of ground meat takes 1 egg and 3-4 pieces of white bread. Adjust accordingly when using more than 1 lb meat.

And something to wash it down with.
Worcestershire sauce mixed into the beef before forming the patty. A little or a lot - your choice.

I hear this sort of thing a lot, and I strongly disagree. The main appeal of grilling is the smokiness from the drippings, which is certainly achieved over charcoal but is also achieved over a well-designed gas grill like a Weber. If there aren’t a lot of drippings, it’s debatable whether charcoal adds much in itself. If you saw me grilling the fresh burger patties I described above on my Weber, with smoke pouring out of the barbecue and flames leaping up when I flip them, you’d understand – especially after you tasted them! ![]()
