English muffin with scrambled eggs (with or without cheese). Maybe a dash of hot sauce and a spoonful of sour cream on the eggs. Nothing better!
Chips & salsa; another excellent simple meal.
PBJ and fruit.
Or baked potatoes and green veg w/ salsa.
Could eat those day in/out.
Apple slices with small slices of sharp cheddar.
2 fried eggs on bread with a little mayo.
If I have any hard boiled eggs in the fridge; smash one up with mayo and make an egg salad sandwich.
A tortilla in the skillet with cheese and salsa.
A go to for me is white rice with a couple of runny yellow eggs on top. Fills me up and I love me some rice.
Toasted till dark, whole grain bread with butter and cheese, preferably Gouda!
Add tea and, voila, breakfast!
Breakfast food. I usually have bacon or sausage around, eggs, and some bread product - toast or pancakes/waffles that I’ve made and frozen.
Aloo chaatfrom Trader Joe’s. If I want to cook ramen noodles with a can of corn dumped in.
A bowl of granola and Wheat Chex with fruit. If I’m feeling at all ambitious, then a grilled cheese sandwich.
Grilled cheese sandwich (if I’m really lazy a toast cheese sandwich)

Another ramen lover here - Sapporo Ichiban chicken and miso are my favourites. I add sesame oil, chili sauce, housing sauce, soya sauce, and grated ginger. I’ve contemplated peanut butter and I’m now inspired by @pulykamell to incorporate PB next time.
My preferred option is one chicken and one miso, though sometimes I’ll just use one (either flavour) on a pile of lettuce for a pseudo-Asian noodle salad.
Tahini also works well.
Naan pizza. Just a naan, tomato sauce and cheese. Maybe some pepperoni and salami if I have any. Throw it in the toaster oven for 10 minutes. Tastes almost exactly like elementary school cafeteria pizza.
Grilled Pizza Sandwich. It’s basically a grilled cheese sandwich with pizza sauce added and maybe some pepperoni.
The funny thing is I am in my mid 40s and saw a video of someone on YouTube making one two years ago. And me facepalming myself for not thinking of this simple idea two decades ago. They are now one of my favorite things to eat.
Generally one of three things if I don’t feel like even heating up leftovers:
Cheese (usually triscuit style) and crackers
Apple and cheese
Apple & peanut butter
But I do normally have leftovers available for re-heating, so it’s generally going to be that.
