I found the name Catherine… that leaves the remaining letters DVMENE. By changing one of those letters, could that be the answer?

And it can give you Catherine Deneuve. (Reinstituting spoiler, because I think it’s proper for a puzzle.)
Catherine also leaves the letter U, so you have Catherine UDVMENE. Change the M to an E and voila, you’ve got Catherine Deneuve.
