I love Indian buffets too, but the very nice on here where I live is $9 for lunch with drinks, including tea, included in the price. Man, that place is good. Too bad it’s on the other side of town, I’d go much more often.
Mexican food bores me.
I’m an Italian food snob so I cannot imagine any Italian food buffet that could live up to my expectations.
I would have to go with Chinese for my buffet style selection because asian food (in general) lends itself well to a large variety of small bites (eg. dim sum).
I voted for Italian, but I’ve never actually seen an Italian buffet joint (well, buffet PIZZA joints, yes, but that’s not the same thing).
I like the concept- but there are infinitely more Chinese buffet joints (and considerably more Indian joints) than Italian.

My favorite buffet was a Vietnamese and Chinese combo place that was only open on weekends. Normally, I’m not a big eater, but I used to embarrass myself there. How I miss it. Something else I miss around here are Souplantation type places, with massive salad bars.
Indian whenever I can. I’ve been lucky in that I’ve only been to two or three bad Indian places. When I was living in DC I went to an absolutely phenomenal vegetarian South Indian place in Virginia one time when my mom and my uncle were visiting me. It was so good, we went back the next day, which happened to be Mother’s Day. They had a special AYCE buffet that was one of the best meals I’ve ever had. My uncle, who lives in south England, loves Indian food, and makes a pretty mean curry himself, still talks about it.
Lots of people say Mexican’s a poor choice for buffet, and generally I agree, but when I lived in southern Colorado there was an awesome Mexican AYCE buffet called Calvillo’s. Started off as a tiny little place in a run down building outside town, and moved to a big new building on the main drag about seven or eight years ago. They do a good job keeping everything fresh, which is key, and it’s pretty authentic New Mexico-style Mexican. Great chile rellenos!

I don’t do AYCE. I’ve done it, but not in many years. I don’t really understand the idea of eating so much that I feel ill and how that’s a good thing because it only cost me $24.95. I prefer to seek quality over quantity.

Although it’s not technically a buffet, we have the Salt Lick BBQ is just down the road. All you can eat meat for a pretty reasonable price.
Everyone, stop GLOATING about Indian buffets. In NWHouston, I can barely find one Indian restaurant, much less a buffet!

Not so impressed with Indian, except that I like their curries better than Thai. Here in the Philippines, you hardly see pure Chinese or Japanese buffets (too tedious.) 5-star restaurants always offer an eclectic mix.

I’d probably go with Indian, since so many Indian foods do well on buffets. But there are other options.
The Monument Inn has a large menu but offers a non-buffet option in which they just keep bringing food until you say "stop. Just simple Gulf Coast seafood.
I love good Tex-Mex but it’s mostly cheap & filling enough that a buffet is unnecessary. (Many years ago, my Mom got her money’s worth taking 3 hungry teenagers to Pancho’s.) Hugo’s sells Mex-Mex & their Sunday buffet is famous.
And I remember a sushi buffet that was really over the top. The city now has a bunch of pan-Asian buffets–need to get up a group to test one out.
Now I’m hungry & not sure that Triscuits & hummus will do the trick…
How about a chocolate ayce buffet? There’s one in Boston.
Unfortunately, despite how heavenly it sounds, chocolate turns cloying pretty fast. Long before you get your $38 worth.
I was going to say I’ve never seen an Italian buffet, but then I realized that’s kind of what an Italian dinner is, but instead of getting up to get the food you pass it around and take what you want.

I voted for Mexican. I’ve never seen a Mexican buffet, and I love Mexican food.
On the other hand, where I live there’s a Chinese buffet practically every two miles, and I’m bored with them.
I ate at an Indian buffet only once. I didn’t like it, but that’s mainly because nothing was labeled in English, and the staff was too busy to translate. I loathe lamb and goat, and ended up sampling several dishes that made me feel ill. However, a new Indian vegetarian restaurant opened not far from my office, and I’m looking forward to giving it a try soon.
I’d prefer Chinese but it needs to be freshly cooked, so I wouldn’t care for a Chinese buffet. I’d tried a few and none have been all that inspiring (even those in China). Italian seems to be a waste of eating because of so much pasta and dough. I went for Mexican; out of the three it seemed the most appealing but after reading this thread should have voted ‘other’.
Indian wins, hands down, for me.
