So I just made a big batch of candied orange peel which, when finished drying, I will dip in chocolate.
I ended up with about 3 cups of very thick syrup which is richly infused with orange. I’ve only done this once before and I don’t recall having had more than a few tablespoons left over. It sort of crystallized and I ate it like candy.
One recipe suggested using the leftovers to sweeten ice tea but this is way too much. I don’t want to waste it so I’m looking for ideas on how to make some kind of candy out of it.
We had a fair bit left over when we made candied cthulhu last year. Ultimately threw most of it out, but in the interim we added it to fruit salad, tea, sparkling wine. The rind itself got eaten, given away, and added to fruitcake.
We had less syrup left when I made candied grapefruit peel, and wound up just keeping the rind in that until ready to use it, then I think we tossed the leftover syrup.
