I just discovered this was a thing at a restaurant called “Smoke” in Tulsa Oklahoma.
Now I wish to repeat the experience at home. There are no shortage of recipes on the internet, just curious if any of my fellow Dopers have a preference.
Thanks.

Chef John(He of the Non-Appearance) has a great one on FoodWishes.com. The video is on YouTube.
Chef Michael Smith makes his with whiskey:
There’s a video of this too:
Here’s how I’ve done it before:
-Cook bacon and set aside.
-Cook onions in the grease until caramelized.
-Add fresh figs and cook until jammy. I bet you could soak some dried figs in bourbon and use that instead.
-Add some bourbon and cook down.
-Crumble the bacon and add it back.
Fantastic with crackers and goat cheese.
