Are there any foods that are good to eat raw but are worse after cooking?

I’m not sure if I’ve ever even had raw beets… But I do like them cooked or pickled.

And sauerkraut is good in the right context, but most cooked cabbage dishes, I’d rather eat it raw. And that includes kimchi, which to me has way too much “cabbagey” flavor, if you know what I mean.

I actually am quite fond of cooked cabbage in various forms. Sauteed, stuffed. Bigos is delicious. I’m also a fan of various coleslaws. More than I am of straight sauerkraut if I’m being honest - I hated sauerkraut as a kid and have only slowly come around, circling through kimchi first. Cabbage is very much on my either/or list.

Huh, i had no idea you can eat them raw. Aren’t they awfully hard? Do you slice them thin?

I had a recipe for cooked carrots where they were sliced and cooked with Madeira until the wine reduced to a glaze. Absolutely delicious. But simply boiled or steamed can be unpalatable to me. Grilling or broiling is fine, but it has to be done long enough to have that browning happen.

ETA: Best beets I ever had were the ones we got fresh from my brother’s godparents when I was a kid. Really sold me on fresh. I love cabbage in all its incarnations. Or course, I grew up on stuffed cabbage (it’s what my grandmother made when we made the trek back to Ohio for a huge family reunion).

There was a restaurant called Piret’s in South Coast Plaza that use to sell a sausage/cabbage en croute (with spicy mustard on the side) that I was addicted to. Sadly, I haven’t been able to find anything since that hits that same spot.

Dress as directed, throw the shredded mixture on top of a bed of arugula, top with goat cheese and if you enjoy the earthy quality of those ingredients (some people really, really don’t), it’s a gorgeous salad.

Only way I eat them.

I did, too. My father made it. But I’m not a fan. I don’t hate it, but i never really liked it.

Will you people hold it down with the stuffed cabbage talk? My wife is getting that look in her eyes that means I’ll have to drive all over the freakin’ county looking for… Shh! here she comes. ::whistling::
