I’m just now starting to look into the Atkins Diet*, and I’ve read part of the newest book, checked out some website, talked to friends.
To those who stick to it, it seems to work well.
But, my breakfast routine has been about the same for 20 years or so. Cereal and toast or muffins. With the occasional egg, sausage, bacon, spam spam spam thrown in on days off.
I think that might be hard to change. Any ideas?
*I’m a pretty big guy, spent several years of my late teens to early 20s body building, but I’m a 40 yr old strong guy with a gut. A year of low fat, more natural foods and biking has done a lot of good, but I’m still too big (for me).
I start the day with two cups of coffee or tea. At work, I have a cup of tea. If I get to the catering truck, I’ll have two eggs and bacon. (Sometimes a bacon and cheese omelette, but I guess those are not extremely popular in Mexico. Either that, or the cook on the truck just hasn’t eaten them. No woories, though. It all comes out the same in the end.) If I miss the truck or just don’t feel like eggs and bacon, I’ll have an Atkins Advantage bar.
But what I really want in the mornings is a nice English muffin with Vegemite on it.
Omelet with sausage and cheese (top with sugar-free ketchup or salsa, if desired); Alternately, some of those low-carb nutrition bars are pretty good (I like the Carb Solutions chocolate and peanut butter); hubby likes the low-carb ready-to-drink shakes, but I hate them! If time is an issue, try hard-boiling eggs the day before, and frying bacon (you can also buy the kind that’s already fried, if you wanna pay the premium); in the morning, eat a couple of cold hard-cooked eggs and a few slices of micro-warmed bacon.
Although I’m not on the Atkin’s diet, I sometimes have a protein shake for breakfast (protein powder, water, splenda, and liberal amounts of ammaretto liquer). A.M. Ale!
I eat a lot of bacon, lettuce and tomato sandwiches made with low-carb tortillas instead of bread.
I also eat Atkins Breakfast bars, although they aren’t my favorite.
You could also try just leftovers from last night’s dinner. Who says you can’t have a hamburger or steak for breakfast?
I got a recipe for “Mock Danish” from www.atkinsfriends.com. Soften 3 oz of cream cheese in the microwave, and use a mixer to blend thoroughly with one egg. Add Splenda and whatever flavorings you like to taste (e.g., lemon juice, vanilla, sugar-free syrups, a handful of frozen blueberries, etc.). Nuke until solid around the edges and creamy in the middle (1:30 in my microwave).
It’s quick and addictive.
I also used to make sugar-free cheesecake on the weekends, and eat it for breakfast in the morning - same basic idea.
