Pferd Leberkäse: discuss.
Ok, I saw this stuff referred to a lot when I was in Vienna but never figured out what it was. Does it have anything to do with horse, liver, or cheese, or is like “chicken fried steak” where it is none of the above? Can anyone enlighten me? Is it something like liver WURST?
And is it good?
Leberkase is a sort of pork pate sausage - not entirely unlike liverwurst in texture, it does not contain either liver or cheese (it may contain onions, garlic, eggs – in fact, it’s sort of a meatloaf). I suspect pferd leberkase is indeed horse meatloaf.
Here’s a recipe. I guess for Pferdeleberkase you’d substitute pork with horse meat. I have to slightly disagree with Nametag, I find Leberkase to be not very similar to meatloaf or liverwurst. I’d liken its texture more to an Oscar Mayer Bologna.
As to the taste, Leberkase is standard fast food fare here in Bavaria. You’d get a hot dog, we’ll get a roll with leberkase. But I’d guess it’s something of an acquired taste, much like Weisswurst.
