This is old news. I was told by one of my professors in microbiology back in '79 or '80ish that nitrites in processed meats do cause cancer, but they also keep microbial growth down. He said that the lives saved by people not getting listeria or some other food-borne illness outweighed the few lost from the occasional cancer.
Wat? You have an entire dead pig there, waiting to be cured up into bacon!
And the entrails, if not so badly damaged from the strangling thing, would make some fine smoked sausage too!
Everything in moderation. If you’re having bacon so much it’ll give you cancer, you’re having bacon so much your heart will explode before the cancer gets you.
You know what else is carcinogenic? Flying in airplanes. I’m still not going to walk to Chicago when I have to go there in a few weeks.
