I stumbled across my Grandmother’s recipe for Jefferson Davis Pie.
1 cup oleo
2 cups sugar
2 eggs
2 Tbsp flour
1 tb vanilla
1/4 tbs salt
1 cup milk
1 can angel flake coconut.
I can use butter instead of “oleo”, right?

Yes.
I don’t know why not. Oleo is margarine. (Probably a brand name). There may be minor differences, but it should work.
The product used to be called “oleomargarine”, shortened to “margarine” at some point.
