I tried this recipe (two ingredients: one banana, two eggs) and it was pretty good. The banana is an indulgence for a pre-diabetic, but I often have two eggs for breakfast, and this was a nutty but easy idea for something new. Have you ever tried it? It tastes pretty much like banana pancakes to me, and I’ve come up with a few small wrinkles to add to it that are tasty and easy.
Is there a downside to incorporating this into my regular diet? Or is this a healthy indulgence, do you think?
I make Dukan Banana Pancakes with egg, Greek yogurt, mashed banana, and oat bran. Delicious.
Whenever we get breakfast at Cracker Barrel, my wife orders banana pancakes with choco chips and smears peanut butter all over the whole kit and caboodle. I think I threw up in my mouth just a little.
My wife likes adding extra eggs to things like pancakes or oatmeal to “add nutrition”. The results usually range from fine to a bit too eggy for my taste.
I didn’t even know that bananas had eggs.

I’ve made the two ingredient banana egg pancakes. I like them just fine. If your diet allows banana and egg, I don’t see why it wouldn’t be good for you. Maybe a little plain yogurt on the side. I’m a big believer in the nutrition of eggs.
