Begun, the scone war has. (A recipe, Podkayne needs.)

I likes my scones dry and gritty, but my husband has always turned his nose up to them. However, he tried a moister scone at a bakery and he decided he liked it. Does anyone have a good recipe for nice moist scones? Preferably sweet, but if you have a good savory recipe, let’s hear it.

I can’t help you, but I just wanted to say the title of your OP is absolutely wonderful.

I’ve got a great recipe-- bakes up super easy quick-- but it’s at home and I’m at work. Actually, it’s my wife’s recipe, and she’s majorly fussy about her scones and shortcakes.

I’ll post it Thursday or Friday depending on the workload, Poddy.

Although it is blasphemy to admit, I think the new Rasberry and White Chocolate scones that Dunkin Donuts has started carrying are just yummy.

Unfortunately, I do not have a Dunkin Donuts nearby, Why A Duck . . . but I approve of rapsberry and chocolate anything.

I know for good scones you need to have the butter REALLY COLD (frozen even works) and you should handle the dough as little as possible.

I’m reading a book that takes place in a bakery, mostly, and they just got done discussing scones. I think they also had a recipe but I didn’t commit it to memory. Incidentally, the book is a novel called “Bread Alone” and I’m reading it for the second time.

Scones are a treat I just don’t have enough.

Cornish Fuggan

1 cup flour
1/4 cup butter
pinch of salt
handful of raisins

Rub the lard into the flour. Add the salt and the raisins. Mix to a stiff dough with a little cold water. Roll into an oval shape and mark a criss-cross on it with a knife. Bake for half an hour in a moderate oven.

–This is the cornish version of the scone, we found it very easy to make and fairly tasty - we often throw in a tablespoon of raw sugar too. This recipe can feed two once or one twice. Enjoy.

Alrighty folks, I’ve found two recipes in my books. One’s called Scones. The other is called Shortcakes. And they’re both good, and easy to bake while watching TV.

Scones
2C flour
2t baking powder
1/2 t baking soda
1/2 t salt
1/3 C Margarine or Butter
1/2 C raisins (or whatever else you want to throw in)
3/4 C milk
1T vinegar

Add vinegar to milk. Set aside.

Mix all the dry stuff.
Cut in Margarine.
Add raisins.
Add milk and mix until just moistened.

Turn out onto floured surface and knead 4 times.

Roll until 1 cm thick (that’s half-an-inch for you yankees)

Bake on cookie sheet for 10 min at 450 F. May be longer if you’ve got an insulated sheet like I do.

Shortcakes

2C flour
3t baking powder
2T sugar
1/2t salt
1/2 C butter/margarine
1 egg
2/3 C milk

Mix the dry stuff. cut in the butter. add the egg and milk. Spoon onto cookie sheet (makes 8).
Bake at 450 F for 10 minutes.
You can sprinkle more sugar on top if you want.
