Although I eat more of the two chicken dishes, the pre-chicken one gets my vote, if for no other reason than that I had a delicious variation Tuesday morning: Pulled Pork Benedict, with jalapeno cornbread and BBQ hollandaise. That and a Bloody Mary for breakfast and all is right with the world.

FYI: Colonel Sanders was not in the military. A Kentucky colonel is the highest title of honor bestowed by the Commonwealth of Kentucky. When it was first started, being a Kentucky colonel did have something to do with the State militia, but it’s morphed into an honor.
