Best queso blanco for chip dipping (preferably premade)

When my family eats at a mexican restaurant, for a few dollars you can buy a container of white cheese that everyone loves to dip their chips in.

I bought a can of queso blanco today at the store and it wasn’t nearly as good. So what is the best brand of queso blanco you can buy storemade?

If not storemade, what is a relatively easy recipe for making good quality stuff at home?

You can make a cheese sauce with your cheese of choice, sodium citrate, and a liquid (e.g. water, beer, milk.)

Dissolve sodium citrate in liquid. Simmer. Stir in cheese. Adjust proportions until you have a consistency that you like. This may require experimentation and cheese consumption. For science.

Google it; looks like there are some super-complicated recipes, and then there’s “melt a pound of Velveeta with a can of Ro-Tel tomatoes and chiles on the stove for five minutes.” Try the second one, maybe?

Hey, how’d you steal the Secret Family Recipe?

One of my long time life hacks: Don’t buy chips and salsa at the store.

Go to a Mexican Restaurant and buy it there. Twice as good for half the cost. (I think I usually spend $3 for both the chips AND the salsa. I’d have to spend twice that at the store)

1/2 pound white American Cheese from the deli
1/4 cup milk

chop the cheese roughly, place it and milk in microwave safe bowl, nuke for 1 min, stir them nuke for 15 to 30 seconds at a time, stirring in between until smooth.

Feel free to add garlic, chopped green chilis or whatever floats your boat
