green chile cheese dip

while out in Albuquerque, my family had a white cheese dip made with chopped green chile’s. i am pretty sure we had it several places but the place with the tree growing in the middle of it was the main place we really liked it.

I have tried to google search fro green chile cheese dip but none seem to be what we had. does anyone have a recipe for this dip? White cheese sauce with chopped green chiles. I have used chipped green chiles and white mexican cheese but it coagulates too fast, I hate mayonaisse so I am pretty sure that wasn’t mixed in as a thinner.

I used to live in Albuquerque. Was the name of the restaurant you ate at called La Placita?

I think what you’re looking for is Asadero cheese, or Oaxaca cheese. It melts smooth (like a Jack cheese), but add some whole milk to it and it’ll stay loose longer. Sounds like you may have used Queso Fresco, which is a crumbly cheese, and doesn’t really melt as much as…spread.

My guess would be El Pinto. At least I seem to remember them having a tree.

La Placita it was! I will try the differnt cheese mixed with milk? I don’t like milk much but maybe the cheese will make the taste blend in.

My cheese dips always contain milk, to keep them thinner at lower temperatures. Very rarely can anyone tell, as long as I use sharper cheeses.
