Part of our supper tomorrow night is going to be a baked potato bar. Here are the toppings I’ve come up with so far:
Sour cream, chives, shredded cheese, bacon, salsa, some interesting dips from the deli counter.
These all sound boring and I’m also looking for some low cal toppings. What can I add or remove that will make people go, “Huh, I never would’ve thought of that, but it’s really good!”
Mmmm. Yup, I cook the potato, open and spread it out with a fork, then sprinkle some A1 sauce over it. Then I usually add some cooked or jarred mushrooms, sometimes some beef or ham or chicken, occasionally some diced scallions and/or tomatoes, and then top it off with cheddar jack cheese. Usually at this point I pop it back in the microwave to get it really nice and melty, then I top with some sour cream.
Potatoes are a full meal in my house. I love potatoes.
Ours too. I like to make an on the fly shepards pie from time to time with seasoned ground beef and peas and carrots stuck in a partially hollowed out baked potato. I call them shepards Hot Pockets.
