I know I’m late to this, but my favorite baked potato topping is still cheese and coleslaw. A lot more popular in the UK than here in the US, for some reason.

If you don’t care how much fat goes on your plate then I recommend this;
slice some onions, sautee them in lots of butter until they are nearly carmelized, add lots of white american cheese, and make sort of a cheesy onion sauce.
Fluff the potatoes with salt and more butter, and add the cheesy onion sauce.
Hmm, interesting. May try.
Ranch dressing. It’s a perennial favorite in my family.
Of course, we live in Alabama, so we put Ranch dressing on anything that stands still for long enough
I’ve found malt vinegar adds some flavor without adding fat and lots of additional calories. I admit it isn’t as good as a potato loaded with sour cream, butter and bacon bits, though.
Don’t forget the sweet-potatoes for dessert!
Toppings like cinnamon, brown sugar, marshmallows, whipped cream, sausage, bacon, maple syrup, all kinds of stuff.

Surprisingly, pesto. If you can get over the :dubious: reaction to green potatoes, it’s delicious.
Also, butter and curry powder.
Chili is good, and can be low fat.
Also surprisingly, crabmeat mixed with butter and cream cheese.
When I have tried to go extremely low-fat, I have eaten pototoes with just salsa.
This is brilliant. I’m totally ganking this recipe.
I never thought of doing that but it does sound good. I made lots of pesto this summer and froze some of it in cubes and they’re probably the perfect size for 2 potatoes. I’ll try it once I recover from Thanksgiving calories.
Coleslaw? That’s pretty bizarre, but I love slaw and am going to have to try it sometime.
Diced tomatoes. I never would have thought of it, but they have a baked potato bar at work from time to time, and that was one of the toppings available. They’re really good when combined with broccoli, cheese sauce, sauted mushrooms and just a bit of sour cream.
Oh, snap! I have all of those things, except the crabmeat.
I now have:
Chives, onions (yellow and green,) mushrooms, salsa, light garden veggie cream cheese, light sour cream, pesto, butter, curry powder, shredded cheeses, black olives and…don’t freak out…Hummus??? I didn’t buy it specifically for the potatoes, but I sure am gonna try it!
Pickled jalapenos, they come in a can. They’re not as hot as fresh jalapenos but they are very tasty and low cal, also great in an omelette.
That’s why tuna was invented
Any sauce that you would put on pasta - even bottle ones.
Same is true of salsa.
Refried beans.
Fried noodles or Thai fried garlic/shallots for crispiness.
I like putting french onion dip that you make with a packet of french onion soup mixed with sour cream on my baked potatos
On the SAME baked potato (if possible)…
A little butter
Some cheese
Thousand Island Dressing
Chopped onions
Chili con carne
Ketchup (catsup)
Wash it down with a glass of chocolate milk!!!
A little taco filling plus sour cream and hot sauce.
Sauerkraut and bratwurst.
Sour cream (Tofutti for me), salsa and guacamole. Like a little taco in a potato. (I’m vegan so I don’t do the hamburger part)
I also like Ranch dressing.
That hummus sounds good.
And I really like the butter and curry powder idea above. I’m definitely trying that.
