The baked potatoes I like best (which are actually often labelled the ‘Aussie’ potatoes, so perhaps thats why nobody’s mentioned it yet) involve copious amounts of cheese, coleslaw, pineapple and beetroot. Mm. Bacon or ham is much welcomed too. The potato itself is an afterthought buried way below the pile.
I know this is a little late, but the following is, according to a chef friend of mine, “the only reason to buy potatoes”.
bacon
cream cheese
sour cream/smetana
one red onion
parsley
salt and black pepper
Fry and dice the bacon, mix it in with the diced onion and chopped parsley. Add (hmm, this is a bit difficult because the original recipe calls for “a packet” of each and your packet sizes are probably different, but) about 200 g of cream cheese and 100 g of smetana/sour cream. Season with salt and pepper; you can also add a little white wine vinegar.

seasoning salt
butter
cheese
I was going to suggest the french-fried onions that come in a can, but this sounds wonderful. I’ll have to try it.

Another vote for ketchup (catsup?), but just by itself – I looked at my grandmother strangely when I first saw her do it 25 years ago, and she asked me what I generally put on french fries.
