Boiled Egg Question-Help FAST??

Last night I boiled some eggs for my potato salad today, and just now, I cracked a couple of them and the yolk looks… questionable. The eggs were boiled thoroughly, and the yolks are solid in the middle, but a little… runny, gooshy on the outside, and the color is… greener than I am used to. The eggs had been in my fridge several weeks, but I have ALWAYS had eggs around that long and longer. Are these safe to use or should I chuck them? They don’t have a questionable odor at all. Whadda ya think?

I would never risk eating food the looks ‘questionable’. Eggs are cheap. Chuck 'em and go buy some more.

I would happin=ly go buy more… except that it’s Christmas day and there isn’t a grocery open in my town. I’ll just make the potato salad without eggs, I guess :frowning:

They’re probably fine. How did you cook them? How long? Greenish yolks are from overcooking, as a rule.

But here is the Golden Rule of the kitchen: When in doubt, throw it out.

Yeah… I probably overcooked them, got a phone call and kinda forgot them; I actually took a teeny tiny nibble of one and it tasted… wrong. The eggs are now in the trash. sigh

I know it’s not the 1950s anymore, but do you have a neighbor you could borrow a few eggs from? We have some neighbors we do that with from time to time. Good luck, and Merry Christmas!

Heh… Shayna… it would seem I am the only one around my neighborhood that actually COOKS… I have asked several times in the past to borrow simple things- a cup of milk, sugar, BASICS… and NO ONE around me ever has them. Or, if they do, they aren’t lending them to me. So I have no reason to think that eggs are any different.

My kick-ass awesome potato salad will just be a little less kick-ass awesome, that’s all. It’s just me eating it, alone, anyway.

Are you anywhere near Redondo Beach, California? We’ll lend you some eggs! Is there a Walgreens or other drug store nearby that’s open? Those places usually sell eggs.

Awww… thanks sweetie! But no… I’m in southern Indiana. That’d be a 'fur piece to travel for eggs!

It’s just not worth getting out of my jammies to go looking for an open store… I’ll be happy with the potato salad sans boiled eggs.

Does anyone actually in real life ask for a cup of milk? Do you take a cup around to the neighbours and ask them to fill it? How much do you spill on the way back home?:wink:

Anyway, if you were a bit closer to me you could have some chicken eggs - duck eggs too, if you wanted them, I’ll never eat them all.

If it makes you feel any better, your post made my mouth water for some potato salad with eggs in it, so I sent my husband off to the store to buy some brunch fixin’s and specifically asked for the kind of potato salad that had eggs. Sadly, our grocery store turned out to be closed, too, so I, too, am suffering without yummy potato salad with eggs. (He did get some yummy bagels and split pea soup from the bagel store, though, so I’m not exactly going hungry. :))
