Brawn- What I Didn't Know

I always enjoyed the brawn my father in law made. For those who haven’t tasted it, brawn is sort of like meat loaf in aspic… A couple of years after his death I finally obtained the recipe. It starts:

Half a corned pigs head…

Where on earth do you buy a corned pigs head?

And then what do you do with the other half?
You might want to try your local ethnic butcher. In Little Italy in the Bronx, near where I lived, obtaining a pig’s head would be easy.
You may have to corn it yourself though.
