Re Scrapple - I think my Gran used to make something like that, a cornmeal mush loaf kept in the fridge. She’d slice it and fry it in bacon drippings and we kids would eat it with maple syrup.

Another thing to do with eggs. When I had unexpected breakfast guests, I took several left-over restaurant tamales out of the husk, carefully fork-mashed them in a big non-stick skillet with lots of melting butter. I added a dozen beaten eggs, slow cooked, turning with a silicon spatula until almost done, removed from heat, added oodles of shredded cheese, put the lid on until it melted. I served it with warm buttered flour tortillas, tortilla chips, salsa, diced green onions, sour cream. Some ate it with a fork, some made a breakfast burrito, but they all loved it.
I keep a can of tamales on hand just for this type of emergency … it’s also good for supper. Sometimes I’ll open a can of tamales and freeze them individually in sandwich bags, so I can make a single portion.
No word on the meatloaf? It’s been three days! Throw us a bone!

I’ve been having a piece for breakfast, and we had leftovers for dinner the other night, and I had a meatloaf sandwich for dinner tonight. Still have plenty left.
But tomorrow morning it’s B&G and eggs.
We live near a big turkey farm. They have every turkey product you could imagine, including a delicious turkey ham salad and turkey ham loaf. Mmmmmmmmmm
I don’t make turkey meatloaf, but I get it occasionally from Trader Joe’s.
