Something super easy that will disappear really fast is a ring of shrimp cocktail from your local grocery store. People are usually fairly impressed, because no one ever thinks of this.
Pepperoni Cheese Bread

Bread:
2 c flour
2 1/2 tsp baking powder
pinch of salt
1/2 c chopped oregano
1 1/4 cups sour cream
1 tbs milk
Filling
8 ounces spreadable cream cheese
1 tbs milk
8 ounces sliced mushrooms, sauteed
8 ounces sliced pepperoni or ham
1/2 c grated cheddar cheese
2 tbs parmesan cheese
Preheat oven to 400°F.

Combine flour, baking powder, salt and oregano in a large bowl. Combine sour cream and milk and stir into dry ingredients. Mix quickly to form a soft dough.

Turn onto a lightly floured surface. Knead gently then press or roll dough into a rectangle shape, about 1/4 inch thick.

Prepare filling. Beat cream cheese with milk until smooth. Spread evenly over dough. Top with pepperoni slices, mushrooms and cheddar cheese. Fold dough over and crimp edges with a fork.

Place on a lightly-greased (or lined) baking tray and allow to rest for 1-2 minutes. Cut a few slits across the top of the dough and brush with extra milk. Sprinkle with parmesan cheese. Bake in a hot oven 400°F for 20 to 25 minutes or until golden. Serve warm with a warm marinara dipping sauce.
It’s good at room temperature, too!

Yea, I agree that’s a good idea. One party spread that I’ve seen served with Ritz Crackers and went over really well at a party was an Easy Shrimp Cocktail Spread (very midwest).
EASY SHRIMP COCKTAIL SPREAD
1 jar cocktail sauce
8 oz. pkg. cream cheese
Small bag frozen tiny shrimp, thawed
Spread cream cheese on platter. Pour cocktail sauce over cream cheese. Top with tiny shrimp. Serve with crackers.
The version I had was made with homemade cocktail sauce, however
My suggestion is to maybe add some chipotle adobo to the cocktail sauce and half of a powdered ranch dressing packet to the Cream Cheese.
This version atop cucumber slices is a bit more upscale and would really impress. I just love cucumbers, too
I know you said you wanted something different from the usual chips and dip stuff, but this is a guaranteed hit.
Buffalo Chicken Dip
6 boneless skinless chicken breasts, baked and chopped into small pieces
1 bottle hot wing sauce, any brand ( I like Texas Pete)
2 blocks cream cheese
1 large bottle ranch dressing
2 cups shredded cheddar cheese
Spread the chicken in a 9 x 13 baking dish. Drizzle the hot sauce over it – use at much or as little as you like, but it probably won’t take the entire bottle. Mix the cream cheese and ranch dressing together and spread over the chicken. Spread the cheddar cheese on top. Bake in a 325 degree oven until the cheddar cheese is melted and slightly browned.
We like this with Fritos, but tortilla chips, crackers, or even celery sticks work just fine for dipping.
