I had it when I was younger and enjoyed looking at the pictures. They looked to be watercolors on a white background but probably weren’t really. Each page had a pair of humans running or swimming alongside the critters, and some of the illustrations were foldouts.

I remember the same book and I loved it as a kid. It was a big book with a blue cover. It had large animals, both extant and extinct, including dinosaurs, extinct mammals, and sea creatures. The human models were there for scale.
Yes! I remember one thing in particular that was a lizard with a very long neck. I guess it just dipped its head in the water to fish?
This book may be somewhere in my house. I’ve done a cursory look but haven’t found it yet.

Some of those reconstructions give me physical pain to look at now all the pterosaurs, and especially Spinosaurus
