No, no joke. I just thought the question would be more compelling if I used actual people.

The color of meat has to do with the type of muscle fiber, slow-twitch or fast-twitch. Human meat doesn’t have anything to do with the color of the skin, which is only skin deep, so to speak. Rudy Giuliani is not necessarily “The Other White Meat.”
It is quite true that color is only skin deep. The muscle tissue of people of different skin colors is the same color. Melanin is contained within the skin cells, and isn’t going to leach out into the meat.
What recipe are you going to use for each? Guiliani Cacciatore, and Nagin Gumbo?
So what is the best part of the human to eat? Rump roast? Thigh? Cheek?

Has there ever been a factual answer to the question of what humans taste like?
Is calling human meat “long pork” a testament to the taste or the texture?
I certainly don’t expect first hand knowledge from the Dope but I’ve got to wonder if there was a consensus among cannibals.

Based purely on the fact that we’re both omnivores, I’m guessing pig is probably one of the closer mammals in terms of taste.
Of course, we could go for the pyschobabble line and say we taste like chicken.
As a child, I met a (former) cannibal once who worked with my grandfather. He was the one who told me that people do indeed taste much like pork. He also said his favorite part was the ribs, on both people and pigs.
