If she’d like a non-traditional carol, how about “The Peace Carol”? Not overwhelmingly common, has an unusual meter and structure, and you can go understated or operatic with it according to your style and abilities.
The Band Christmas Must Be Tonight never gets any play but I’ve always liked it.

IIRC, it doesn’t specifically reference Christmas, but I agree that it always makes me think of Christmas/winter when I hear it.
