I was running late this morning, so stopped to grab a muffin on my way to work. Since they were out of cranberry-walnut (boo hoo), I went for corn.
Sucker has kernels of corn in it.
That might be okay for a dinner corn muffin, with chili or ribs, but dang, not what I want first thing in the morning.
I’m not sure I’ve ever had a corn muffin with a whole kernel in it.
That reminds me though - I bought a corn muffin while I was out today - first time in nearly a year probably - I’ll have to go get it.
Sounds great- give it to me!
I didn’t vote because I don’t eat corn muffins. (Well, not often.) It’s easier for me to make cornbread. I put whole kernel corn in my cornbread. (And chipotle chilis and Cheddar cheese.)
I don’t put whole kernel corn in my hushpuppies.
I said “other” because I think it would depend on if I was in the mood for cornbread or not and not necessarily dependent on the time of day. I could easily see munching a cold pone for breakfast if I was in the mood for it; the presence of a kernel of corn wouldn’t factor in.
That said, I love making cornbread with cream corn, jalapenos and cheddar cheese. Most usually I make it with buttermilk and add wheat germ to boost the nutrition factor.
Same as Ellen. Sometimes the whole kernels are good; sometimes they’re not what I want.
I thought this was going to be about sugar or not in your corn bread.
Way too controversial for me … go ahead and start a companion poll, though.
Sometimes I feel like kernels, sometimes I don’t. Mostly I prefer non-kerneled, but I do like mexican cornbread/muffins with kernels and peppers.
I don’t if I looked in the wrong places, but I was hugely disappointed not to find cornbread or muffins for sale anywhere in vicinity of Mitchell’s Corn Palace.
I don’t really care that much, either way. The corn kernels don’t make a huge difference in flavor and only a slight difference in texture.
Definitely not for a breakfast corn muffin. Yech.
They can be good for a dinner cornbread, but overall, the answer is no, so that’s how I voted.
I don’t like kernels of corn ever; for me much of the appeal of eating stuff made from com is to get the flavor without the kernels. So, no kernels in corn muffins or anything else.
You ARE going to share the recipe, yes?
I’ll take my cornbread with whole kernels or none, dry or moist, any time of day, bread or muffins. I looooooove cornbread.
I don’t generally eat corn muffins, but I’ll take my corn bread with or without whole kernels. At our last Rev War encampment on Memorial Day weekend someone brought delicious corn bread with kernels, which I ate at breakfast and at dinner. Very yummy.
(And no matter how cornbread “should be,” I prefer it relatively moist and somewhat sweet.)
Kernels are acceptable for dinner, but even there, I’d prefer without. But for breakfast? No way.
However, my mom has this corn casserole she makes for potlucks that has whole kernels in a corn-muffin-mix base, and that’s good. But it’s not corn muffins, just related.
Oh, and the muffin or pone itself shouldn’t be sweet. If you want it sweet, you put honey on afterwards.
Well, the recipe is from a former Doper’s spouse, and he’s included it in a cookbook. I wouldn’t feel right posting his exact copyrighted recipe. (He also has a nice recipe for Cajun Salmon, which I’ve posted several times in various threads. He’s giving that one away.)
But… I can give you the general idea. Make your standard cornbread batter. (Not sweet!) Add a can of drained whole kernel corn. Mince two chipotle chilis (from a can) and add them. (I like it better with four chilis, and some friends agree. But it would be too hot for my cow-orkers.) Add a cup of shredded medium Cheddar. I bake it in a greased 10-1/4" cast-iron skillet. So basically, make your regular batter and add stuff to it.
.
Other: I’ve never heard of corn muffins.
Cornbread is a crumbly batter bread made with some or all of the flour replaced by cornmeal, and is probably the single most distinctively American food. Corn muffins are the same thing, just baked in single-serving round muffins, rather than in a single big pan. And “corn” here universally means American corn, AKA sweetcorn, AKA maize: Most Americans aren’t even aware that the word can refer to anything else.
I can appreciate that. Thanks for the basics. That would go great with my boyfriend’s chili and he’s making it this weekend.
Voted other, I prefer No Corn muffins
No. Cornbread without kernels is fine any time of day - with kernels is always lousy. I feel the same way about brownies with chocolate chips. Abominations!
