Dear God! What do I do with all these EGGS?

Thats right EGGS! I was grocery shopping Sunday and ran across a great sale on eggs… in fact I got the last two cartons… “TWO FOR ONE! Large 18 pack eggs for $3.00!”

That right… I am the proud owner of 36 eggs for $3.00. Do you know how much eggs cost in the desert??

My Question is this. How long will eggs last in the fridge?? It will be pretty much ME eating them and it usually takes me a long time to get through a dozen.

What the hell else can you do with eggs besides breakfast? I only eat breakfast on saturdays! Recipies??

I’ll come over if you like. I can quite happily go through an 8-egg scrambled egg breakfast any day (or every day).

What, you may ask, is a Fritatta?

Welllllll, it’s a omlette with lots of stuff in it, but you toss it under the broiler at the last minute which makes it a dinner item for some reason.

Or, if you’re comfortable with your masculinity, you can do quiches…which are pretty much Omlettes in a pie-crust.

Or…you can make meringue cookies with the whites and… um… other stuff with the yokes…

I’ll get back to you on this. (BTW: Egg lifespan is give-or-take about 3-4 weeks in the fridge, in my experience. They can stay longer, but I wouldn’t trust 'em much past that unless they were really fresh to start out with.

Mayo! You could make fresh Mayo! THAT’S what you do with the Yolks! Homemade Mayo by the gallon! That’s the ticket! (Do you like Mayo?)

I dunno… stuff like that. I don’t like eggs much now (I ate them waaaaaay too much as a kid… now I can only eat them scrambled and with ketchup or as cheese omlettes)

Eggs will keep for a very long time if you coat the shells with Vaseline. Don’t bother asking me how I know this.

Quiche. A good Quiche is worth it’s weight in calories. Try making a simple cheese and egg quiche, and then toss in some sliced potatoes and bacon. Heaven.

They last months even without coating, Matt, & don’t worry, I won’t ask! :eek:

I’ve heard they could last a month in the fridge after the sell by date.

And of course, what you want to do is make deviled eggs and then throw a party to share them with your friends! Mmmmmmm…deviled eggs.

Or you could just give yourself an egg-white mask every night and use the yolks for um, conditioner? I wouldn’t rinse with hot water though, because then you’d have cooked eggs in your hair and on your face and that would be kind of icky.

Fried egg sandwiches are mighty good too. Damn now I want one! But they always make me feel queasy after I eat them. Forget I brought it up.

Make your own mayo (easy in a blender) and add significant fresh garlic and maybe mustard. Look for recipes for aioli - FanTAStic with fresh veggie bits as a dip. Slather it on a jacket potato.

Hardboil a couple of eggs, put hot (eg English) mustard on toast, mash shelled hardboiled egg on top of mustarded toast. Beer goes well with this, unless you are prone to reflux.

To tell if an egg is usable: Fill a tall glass with water. Gently drop the uncooked egg in. If it sinks to the bottom of the glass and lies flat, it’s fresh enough to use for uncooked egg foods such as mayo or aioli. If it sinks to the bottom and stands upright or just lifts off the bottom, it’s fresh enough to use in cooking. If it floats, ditch it. This is not infallible (eggs can go off in non-gas-producing-ways) but it is an excellent rule of thumb. For multi egg recipes, break each egg into a container before adding it to the recipe, or to the pool of opened eggs. That way, if one egg is noxious (and you will know) you haven’t lost everything you’ve prepared.

Oh, yes, very important: Make sure your SO also eats the aioli. Trust me on this.

mix some milk with 2 eggs in a bowl until you have a deliciously fattening looking mixture.

bip slices of bread in this mixture and then fry until golden brown.

Delicious.

Devil them suckers. Yes, raw eggs will keep for weeks in the fridge; cooked ones, not much more than five days, in my experience. Hardboiled eggs, btw, are easier to peel if the eggs are at least a week old before cooking. Air gradually seeps into the shell and makes it looser.

hey, thanks AK. i got a new auto-ice cream maker for x-mas and recipes often call for raw eggs. i never knew how to tell if my eggs were too old for this or not.

Whammo, if you have an ice cream maker, make ice cream every day and you’ll be out of eggs in no time.

How about Montie Cristo sandwitches? that’s what I call them, but I think they have other names in other places. bascially make some french toast, then get some sandwich meat and cheese. Make a sandwich out of the french toast and meat and cheese and put it back into the pan and heat it up some more. hmmm… maybe I’ll make some this weekend.

Add some sugar and a dash of vanilla to this mixture and you have French Toast.

Or you could teach yourself to juggle.
