Dinner time!

It’s been a little while since I’ve seen a ‘What’s for dinner’ thread, so here’s a new one.

Last night I made escargots in a sauce of butter, cream, sherry, shallots, and garlic, with the snails atop mushroom caps and topped with the sauce, bread crumbs, and freshly-grated parmesan. I toasted some baguette slices to go with them. Rib-eye steaks cooked over charcoal was the main course, and the veg was just a salad.

Yesterday I made the dressing for shaved beef salad, and picked up some Boar’s Head roast beef shaved as thin as they could make it from the store. That’s what’s for dinner tonight.

Barbecue chicken sandwiches, using the Pioneer Woman’s method. I dropped the slaw but cut up assorted vegetables to have on the side.

Om nom nom.

Sliced pork loin roast, baked mac & cheese and a veggie of some kind, haven’t decided what kind.

Home made coleslaw with nuts, and microwaved ( popped) potatoes.

Tomorrow sliced andived mixed in with boiled potatoes and sausage

Pulled pork or something with marinara sauce or both, since I have 10# of pork on the Egg and a huge pot of marinara on the stove. Fine pursuit for a rainy 3-day weekend.

Tonight I will make chicken pot roast.

Popped potatoes?

Tonight I’m making chicken with buttery lemon cream sauce with farfalle pasta. Except I add asparagus tips, and I pan-fry the chicken instead of baking.

One night last week I made a new-to-me recipe- pork loin braised in milk The milk cooks down into browned little curds, which doesn’t sound that good, but actually is delicious.

“Tangy Pork Chops” in the crock pot. Pork chops with onions, bell pepper, celery, stewed tomatoes, and a Worcestershire/vinegar/ketchup/brown sugar/lemon juice sauce. I’ll eat some of it over white rice tonight, and freeze the rest.

Tonight we’ll have poor man’s lobster (with halibut), rice pilaf and a salad. There is a bit of king crab in the freezer so I’ll cook that up and add it to the salad.

Tonight BBQ Baby Back Ribs, coleslaw, baked potatoes.

Last night: grilled trout w/steamed veggies and onion rings from Race Street Fish and Poultry. Tonight: home made pizza w/pepperoni, onion, tomato, roasted garlic and a dollop of pesto.

Tonight we had crabcakes. I made a simple salad with black olives and hearts of palm and vinagrette.

Boring grilled rib eyes, salt potatoes and harvard beets today [all foods picked because they are my mom’s favorites]

We have a duck for tomorrow, thinking of basic roasting - shove an orange and an onion and some thyme into the cavity, slashing the skin lightly and roasting until done. Not sure what to have with it, probably steamed asparagus, a tossed salad and I was thinking wild rice. Or maybe polenta refried in some of the duck fat. I have a tube of polenta hanging out in the pantry.

Tonight was helpings of pork green chili from the giant vat I made today. Enough for lunches this week and more for the freezer.

Tomorrow night will probably be jalapeno, shallots and elk steak stir-fry.

Mmm… We always enjoy the shaved beef salad. And the beef was on sale, so there’s plenty left. (Need more greens, though.)

Tonight we’ll have burgage. Looks like rain today (it’s been sprinkling a bit already), so I don’t know if I’ll use the charcoal grill, but I can use the small one under the patio roof. Toasted buns, lettuce, tomato, cheese, and condiments. SO wants mushrooms on top. I can make some for her, but I generally tend to be a bit of a purist when it comes to burgers. (Generally. Bacon, avocado, Ortega chilis, jalapeños, or a fried egg are all acceptable when I’m in the mood.) I also got a bag of Fritos.

Yes! Ever tried it? They get kind of chewy, very tasteful. Like potatoes packed in tinfoil that are put in hot ashes to roast. Popcorn and potatoes are two things a microwave oven actually does better then a regular oven, and a lot faster.

Brush a potato clean under running water. Don’t peel it. If it is large, cut it lengthwise in half. Put the potatoes in the microwave oven right as they are, cut side under. Cook for about five to ten minutes, depending on the size of the potatoes and how many you put in.
If you go for extra yummie (and who doesn’t) cut the potatoes in the cut side about half their depth. Put a little dollop of of butter/salt/cheese/sour/cream whatever will melt nicely into the cut slits in the potato.

It may be a language thing: a dry baked potato this way is called a “gepofte aardappel” in Dutch, which I translated as " popped"

Petit Sirloin Steaks, baked potatoes and steamed veggies

Chicken, red bell pepper, snow pea, napa cabbage stir fry with hot & sour sauce (from Cook’s Illustrated). Super yummy. No leftovers, oh well.

Whole salmon. Steamed broccoli. Salmon sprinkled with Penzey’s Sunny Paris, which smells like heaven. Heirloom tomato wedges with jalapeno cheese. Remind me, I really need some fish tweezers for pin bones.

Last night it was giant pieces of fried cod, slaw and hushpuppies.

Duck sounds good this weekend. I’ll have to find a recipe that tickles my fancy.

Oddly enough I’m really craving pickled beets.
