Tonight, I’m making pork, pineapple, and anaheim chili salad with avocado. This recipe, except I put it on an actual salad and not a couple leaves. I also throw on a lil feta. I’ve made this once before and I could not believe how good it was, so I am excited like a good little fat kid.
I am also making pork, in the form of this slow-roasted sirloin. 225 for 3 hours, on a bed on onions and carrots. This is the third time I’ve made this and it is delicious. Slow is the way to go.
Also new potatoes and greasy shorts (green beans).
An easy night. Tomatoes from the garden, corn from a farm stand, and happy-cow small-local-farmer hamburgers grilled on charcoal.
I’ve been on a whole foods diet, but I’m having surgery tomorrow morning and can’t eat after midnight, so I figure I need some substance. I’m putting butter on the damn corn.
Meatloaf with garlic-onion roasted new potatoes, corn on the cob, and a green vegetable to be named later (probably peas. It always winds up being peas).
Yum, yum, yum. This is such a good time of the year for eating. My refrigerator has been full of fresh veggies and fruit. But we’ve been eating our way through it all because tomorrow we’re going to drive up to Itasca State Park, the source of the Mississippi, for a few days.
So tonight it’s the tail end - tabouli with fresh tomatoes and parsley on whole wheat honey pita, wood smoked hot dogs and chocolate chip walnut bars.
I like a ground beef chili with red pepper, green pepper, celery, mushrooms, red onion and beans. This batch has kidney, and black beans. It’s still simmering and by God it will be good.
Brats & Hot Italians over lump, then done up with condiments, onions and giardinera on romaine leaf [del]sausage hammocks[/del] taco shells. Low carb diet makes for some odd compromises.
Zucchini planks tossed with OO, sesame oil, soy sauce, oregano, S&P.
Cucumber salad with cilantro, garden jalapeno, onion and a rice vinegar dressing with a touch of fish sauce.
If the coals are still going, I have an eggplant that will go right on them to roast and char the skin. It is my new favorite way to eat eggplant and great with some sour cream, lemon juice and sumac.
Looks like garden tomatoes are another week or so away, if the squirrels leave me any.
Take-out Chinese after a movie around here: Sweet & Sour Chicken, Garlic Chicken, rice, egg rolls and Hot & Sour soup. Just the thing after seeing “The World’s End.”
Pork heavy and vegetable light tonight here! As I posted over in this thread, with some help from the Dope I have successfully cooked a meat/bean stew. I would like to call it a feijoadavariant, but I’d never even heard of it until yesterday, so meat/bean stew it is. Black beans, three kinds of pig, onions and garlic over rice with some green veggie toppers and lime juice.
Reheated rice and beans with a couple hot dogs. Probably only eating one meal today so I’ll need the extra protein/fat.
Need to go grocery shopping tomorrow…
Chicken breast, pounded flat, soaked in buttermilk, then breaded in Panko mixed with herbs de provence, fried in butter and olive oil, served over orzo that has been tossed with butter and Parmesan cheese. Homemade spiced pear sauce (made today) on the side.
