Title pretty much says it all.
One of the arcade (combo) games has a few versions of swordplay. I’d hardly call it fencing but it’s there. I’d remember which game it is (Resort?) but I never remember stuff and I’m not home to check. If no one helps before I get the chance I’ll come back and tell ya.
Wii Sports Resort does include Swordplay which I always found really fun. It is more like an American Gladiator style game where you try to know your opponent off a platform.

Do this for even 20 minutes and your arms will feel it, guaranteed!! Loved playing this with the boys.
Which causes a bit of…complaint in the fandom, since Link is generally portrayed as a southpaw, and the Wii games, since most of the players are not, have him using the sword righthanded to match how the players will be holding the Wiimote.

Sports Resort is great. Plenty of upper arm exercise in their games. Form and quickness can be fun.

Of course, that is not really so much ‘swordfighting’ as it is ‘flailing around wildly until your opponent falls off the platform’.
That’s a different Wii game.
All kidding aside, in my experience the key to beating the computer at high levels is to parry the attacks before swinging back.
It’s more about timing than “swordwork”, though.
